This is a recipe for easy and very tasty soft coconut cookies.
The ingredients for this recipe are not expensive, you can find them in all supermarkets.
These cookies are made in 30 minutes hour including baking time.
Soft Keto Coconut Cookies
Servings: 20
• Ingredients:
200g / Dried shredded coconut
400 ml / Coconut milk (canned)
120g / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1)
50g / Coconut flour
2 / Eggs (100 g)
1 pinch of salt
1 tsp / Homemade Vanilla Extract
• Instructions:
1 Preheat the oven on 175°C (fan assisted).
2 Mix all the ingredients in a bowl.
3 Form 20 balls of this mixture and place on a baking tray covered with parchment paper.
4 Bake for about 20-25 minutes until lightly golden.
5 Let the cookies cool after baking.
• Serve and enjoy!
