Two portions low carb, keto friendly, quick and easy microwave chocolate cake, with a dairy free version, sugar free, gluten free, nut free and also diabetic friendly!

This chocolate cake is ready in just 10 minutes!
It is very easy, nut free, there's no need to use the oven and also has a dairy free version.
Of course it can be baked in the oven as well but in this case it needs more time (about 15-18 minutes).

Quick Keto Chocolate Cake For Two
Servings 2
• Ingredients (for the cake base):
1 tsp / Coconut oil or butter
20 g / Erythritol -Stevia blend 1:1
10 g / Cocoa powder
2 tsp / Coconut flour
1/2 tsp / Backing powder
1/8 tsp / Salt
1 / Large egg
1 tso / Apple cider vinegar
2 Tbsp /Heavy Cream*
• Ingredients (for the filling):
100 g / Cream cheese*
1-2 Tbsp / Erythritol-stevia blend 1:1
1 Tbsp / Cocoa powder
1 tsp / Vanilla extract
3-4 Tbsp / Heavy Cream*
• Instructions for the cake base:
1 Heat the oil with the sweetener for 30 seconds in the microwave.
2 Mix the cocoa powder with the coconut flour, the baking powder and the salt.
3 Add the heavy cream, the oil-sweetener mixture, the egg and the apple cider vinegar.
4 Mix well and bake for 90 seconds in the microwave.
I use a glass 10x10 cm ramekin.
5 Remove the cake base from the ramekin and let cool for 15 minutes.
• Instructions for the filling:
1 Mix the first 4 ingredients and add the heavy cream. Stir until smooth.
2 Cut the cake base into 2 parts and apply the cream on each base. Then place one over another.
3 Divide into 2 portions.
•Notes:
*If you avoid dairy you can use coconut milk instead of heavy cream.
*Cream cheese can be replaced with cold whipped coconut cream.
