Keto Kourabiedes

Low carb (keto) kourabiedes (Greek traditional Christmas cookies), sugar-free, gluten-free, and also diabetic friendly!

This is the first recipe for kourabiedes cookies that I tried to make.


The result was very tasty, fluffy kourabiedes cookies that have nothing to envy from the conventional ones.


In many parts of Greece, these cookies usually offered to the guests after the baptism of a child. In fact, in some villages, they are used to bake these cookies for every "joy", whether it is a wedding, the birth of a child or another celebration!

The smell of these baked almond cookies always turns me back to my childhood ... when my mom used to bake them. She always stored the kourabiedes in a wooden closet which smelled butter and vanilla for almost a year.


You may think that some ingredients are hard to find, but these are the ingredients that make this recipe so successful!

Portions: 35

Ingredients:


4 / Eggs (medium sized)


2 / Egg whites (medium sized eggs)


1/4 tsp / salt


120 g / Erythritol - Stevia 1:1


1 tbsp / Lemon juice


200 g / Melted butter


2 tsp / Homemade vanilla extract


60 g / Reduced fat almond flour


100 g / Almond flour


60 g / Coconut flour


1 tbsp / Psyllium husk (powdered)


1 tsp / Guar gum


45 g / Protein powder

(Whey isolate unflavoured)


1/2 tsp / Baking soda


80 g / Chopped almonds



For sprinkling:


150 g / Powdered Erythritol -Stevia 1:1



• Instructions:


1 At first roast the almonds in a preheated oven at 180°C, for about 15 minutes.


2 After they cool, chop them in a food multi or with a knife and set aside.


*Note:

You can also use almond sticks that will be roasted in a non-stick pan (be careful not to burn the sticks).


3 Melt the butter and let it cool.


4 Prepare a large baking tray or baking sheet with non-stick baking paper.


5 Mix and sift the dry ingredients.


6 Beat the eggs with the egg whites, salt and sweetener, for about 10 minutes until fluffy.


*Note:

Eggs should be in room temperature.


7 Add the melted butter gradually, vanilla extract and lemon juice.


8 Combine the mixture of dry ingredients with the egg mixture stirring with a fork or by hand and add the roasted almonds.

The mixture is sticky but it should be formed with oiled hands.


9 Form a ball with the dough, wrap with cling film and put in the fridge for about 30 minutes.


10 Preheat the oven to 170°C (conventional).


11 Oil your hands with some olive oil or coconut oil and shape the cookies into the shape you want.


This dough is enough for 35 kourabiedes of 21 - 25 grams each.


12 Bake for about 15 minutes.

Kourabiedes must be blush in colour.


13 Sprinkle or dip the cookies in the powdered sweetener after they cool.
