Waffles is easy to make, you don't need to turn on the oven and they are delicious.
This recipe is ideal for those who avoid nuts and there is a dairy free version for those who avoid dairy.
Of course the chocolate syrup is optional.
Chocolate raises the amount of carbohydrates but you can always control the quantity.
I bake waffles as a special breakfast on weekends and enjoy with a cup of steaming coffee.
Keto Waffles With Chocolate Syrup
Servings 4
• Ingredients for the waffles:
2 / Large eggs (110g) (at room temperature).
50 g / Erythritol-stevia blend 1:1
120 g / Bio heavy cream*
1 tsp / Homemade vanilla extract
45 g / Coconut flour
1 Tbsp / Powdered psyllium husk
1 tsp / Baking powder
1/5 tsp / Salt
1 tsp / Apple cider vinegar
• Chocolate syrup ingredients:
80 ml / Organic heavy cream*
30 g / Erythritol stevia blend 1:1
30 g / Butter*
60 g / Dark chocolate (with >85% cocoa content)
• Instructions:
1 In a medium sized bowl beat the eggs, sweetener, heavy cream, vanilla extract and vinegar, with a hand mixer, for 1-2 minutes.
2 Add the rest of the ingredients and beat for a little longer.
3 Let the mixture rest for 10 minutes.
4 Heat a waffle iron and bake the waffles for about 5 minutes (depends on the waffle iron) until golden brown.
• Chocolate syrup instructions:
1 In a small sauce pan heat the heavy cream (or coconut cream) and sweetener, on a low to medium heat.
2 Add the butter or coconut oil and the chocolate, set aside, and stir until the mixture is homogeneous.
*Notes:
• Heavy cream can be replaced with coconut cream or
100 ml coconut milk + 20 g coconut oil.
• For the syrup you can use coconut cream or 70 g of coconut milk + 10 g coconut oil instead of heavy cream.
• Butter can be replaced with coconut oil.
3 Pour the chocolate syrup over the waffles.
• Serve and enjoy!
