These vegan cookies are very easy and so tasty!
Of course they do not contain gluten or sugar neither eggs or dairy.
These cookies are crisper the day after baking so there's no need to be stored in a closed container.
They are ideal for everybody.

Keto Vegan Cookies
24 cookies
• Ingredients:
100 g / Almond flour
40 g / Coconut flour
40 g / Reduced-fat golden flaxseed flour
40 g / Shredded coconut
1/4 tsp / Salt
1-2 tsp / Homemade vanilla extract
1,5 tsp / Baking powder
110 g / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1)
1/4 tsp / Guar gum (optional)
120 g / Coconut oil
130 ml / Almond milk
1 Tbsp / Lemon juice
50 g / Dark Chocolate (> 85% cocoa content) in small pieces (you can also use the chocolate to decorate the cookies after baking).
• Instructions:
1 Preheat the oven at 180°C.
2 Mix the dry ingredients except the chocolate.
3 Add the liquid ingredients and stir to combine.
4 At last add the chocolate in small pieces (or melt to drizzle the cookies after baking).
5 Form 24 cookies, and place on a baking tray covered with parchment paper.
6 Bake for about 30 minutes until golden.
