This is the easiest two version cookie recipe, with only few ingredients.
If I want something easy and delicious I make bake these cookies.
I also use this recipe to make cookie Ice cream.
Or I use these cookies as "cereals" with almond milk for breakfast.
This recipe can be enriched with nuts or pieces of chocolate.
You can combine the two doughs and make marble cookies, or just dip the
cookies into melted chocolate.
They will be delicious!
Keto Vanilla And Cocoa Cookies
16 cookies
• Ingredients for the vanilla mixture:
100 g / Almond flour
20 g / Bamboo fiber flour*
90 g / Erythritol - Stevia blend 1:1
8 g / Baking powder
1/8 tsp / Salt
2 / Large eggs (100 g)
30 g / Coconut oil or Ghee
• For the cocoa mixture:
30 g / Cocoa* (instead of the bamboo fiber flour)
5 -10 g /More sweetener*
• Instructions:
1 Preheat the oven at 160°C (fan assisted).
2 Mix the dry ingredients.
3 Add the eggs and coconut oil.
4 Knead to combine the ingredients.
5 Take spoonfuls of the mixture and put on a baking sheet covered with parchment paper.
6 Press the cookies with wet fork to flatten.
7 Bake for about 12 to 15 minutes depending on the oven.
• Serve and enjoy!
• Tip
If you want the cookies to be crispier, put them in the oven for a few more minutes after they have cooled completely. You can do this the next day as well.
