Keto Sweet Pie Or Cheesecake

Low carb, keto friendly sweet pie or cheesecake, sugar free, gluten free and also diabetic friendly!

This pie reminds me of the delicious German-style cheesecake (Käsekuchen), but it's also something between a milk pie and Cretan kalitsounia.


It's not easy to describe it but it's definitely delicious!


The proportions are for many people but you can easily use half the amount of ingredients and bake in a smaller baking pan.


I sometimes use half the amount of the ingredients to make cheesecake and always come out perfect!



Keto Sweet Pie Or Cheesecake


Servings 24

• Ingredients for the crust:


3 / Eggs


2 Tbsp / Avocado oil (or olive oil)


1 tsp / Homemade vanilla extract


50 g / Erythritol-stevia blend 1:1 or any other natural sweetener


1/4 tsp / Salt


100 g / Coconut flour* (reduced fat)


80 g / Almond flour* (reduced fat)


180 g / Cold butter



• Filling ingredients:


4 / Yolks


1 / Egg


120-150 g / Erythritol-stevia blend 1:1


1/2 tsp / Guar gumm


2 Tbsp / Bamboo fiber flour


60 g / Melted butter


600 g / Cream cheese


250 g / Mascarpone cheese


200 g / Smand (smetana)


Zest and juice of 1/2 bio lemon

• Instructions:


1 Preheat the oven at 180°C.

2 Mix the almond flour and coconut flour with the sweetener and the salt.


*Note:

The almond flour and coconut flour I use are reduced in fat.

You can replace almond flour with the same amount of coconut flour (total of 180 g).


3 Beat the eggs and add the vanilla extract, avocado oil and flour mixture.


4 At last add the cold butter.


5 Knead the dough a little bit and spread it in a buttered baking pan.


6 Pierce the crust several times with a fork and bake for about 10 minutes.


• For the filling:


1 Mix the sweetener with the guar gum and bamboo fiber flour.


2 In a large bowl, beat the yolks the, egg, the cheese and the smand.


3 Continuing beating, add lemon juice and zest, the sweetener mixture and the melted butter.


4 Spread the cheese mixture on the crust and bake for about 20 minutes at 180°C. Then lower the heat at 160°C and bake for 1 more hour.


5 After baking it is better to let the pie in the oven to cool down by opening the oven door only a little bit.
