Some recipes such as pan cakes and waffles are served with syrup..


It is an essential ingredient for many desserts in Greek cuisine.


I was experiencing several times trying to make a decent syrup that satisfies my taste buds.


I tried to make the syrup using stevia and erythritol, but the results wasn't as expected. These sweeteners didn't make a right syrup consistancy.


But this simple recipe can be the solution.


The syrup I made has a perfect smell, tastes very similar to a conventional syrup and has no carbs or calories!


It's important to achieve the right consistancy especially if it's going to be used for melomakarona.


The good news is that you can easily fix the consistency of the syrup by adding water to dilute if it's quite thick, or on the contrary, adding guar gum to have a thicker texture.


Keto sugar-free sirup

Keto Sugar free Syrup


300 ml syrup:

Ingredients:


250 ml / water


2 / Chamomile Sachets (herb tea)*


120 g / Stevia - erythritol (preferably powdered) or other sweetener in a ratio of 1:1


1 Tbsp / Lemon juice


Peel of half a bio lemon


1/4 - 1/2 tsp / Guar gum*


Optional:

1/2 / Cinnamon stick


15 / Cloves


1 pinch / Turmeric

Instructions:


1 Boil the water with the chamomile sachets and lemon peel for about 5 minutes and optionally add cinnamon, cloves, tumeric.


2 Set aside and throw away the chamomile sachets.


3 Mix the guar gum with the sweetener and add both to the syrup while stirring.


Tip.

It is better to beat with a hand mixer as guar gum does not dissolve easily.


4 Boil the syrup for a few minutes until you have a clear mixture.


5 Drain the syrup before storing if necessary.


6 Store the syrup in a glass container and keep it in the refrigerator for about 1 week, (it thickens a little more as it cools).


The syrup is ready to use where needed.

Notes:

• If erythritol, or a mixture of sweeteners containing erythritol is used in this recipe, the syrup may crystallize (characteristic of erythritol).

If the syrup is stored directly in a closed container it usually does not crystallize.

If it's crystalized, you can warm it a little bit to fix the consistency.

A good solution is to replace half of the sweetener with allulose or xylitol sweetener (keep xylitol and products containing it away from pets) and this is usually the version I use.


• Chamomile can be replaced with sugar-free apple tea or other aromatic herb tea.


• Lemon peel can be replaced with orange peel.


• Guar gum can be replaced with xanthan gum or sodium alginate.


• This recipe does not include macros.
