Low carb keto friendly rustical bread, gluten free, wheat flour free and also diabetic friendly!

This is one of the most delicious breads I have ever made!

It really tastes like a village bought whole wheat bread and has only 1.8 g of carbohydrates in each slice!


This is a fragrant bread, with the right humidity, and it will perfectly accompany any dish, especially your breakfast.



Keto Rustical Bread


Servings: 16

Ingredients:


100 g / Almond flour


45 g / Coconut flour

25 g / Psyllium husk


30 g / Whey protein isolate powder (unflavoured)


10 g / Baking powder


2 tsp / Dry active yeast


½ tsp / Baking soda


1 Tbsp / Erythritol - stevia blend 1:1


1 tsp / Salt


6 / Eggs (medium-sized)


250 g / Quark cheese 20% fat*


2 Tbsp / Apple cider vinegar


4 Tbsp / Olive oil



* Notes:

• Instead of 250 g Quark cheese you can use 10% strained Greek yogurt,

or 200 g cream cheese with 50 ml heavy cream,

or 250 g cottage cheese (blended)

or 250 g mascarpone cheese (in this case you have to remove 2 Tbsp of the olive oil.



• Instructions:


1 Mix the almond flour with the coconut flour, psyllium husk, protein powder, baking powder, baking soda, active yeast, sweetener and salt.


2 Preheat the oven at 160°C.

3 Prepare a loaf pan with non-stick baking paper or silicone baking forms for the buns.

4 Separate the yolks from the egg whites and beat the yolks with 1 Tbsp of apple cider vinegar.


5 Add the olive oil and Quark cheese* and continue beating until fluffy.


6 Beat the egg whites with the 2nd spoonful of apple cider vinegar until stiff.


7 Pour the mixture of dry ingredients in 2-3 portions, in the mixture of the yolks and stir constantly.


8 At last add gradually the egg whites and stir lightly.


9 Pur the mixture in the baking loaf pan and sprinkle the dough with some bamboo flour, or sesame seeds or potato fiber flour.


Buns

10 Bake for about 40 minutes at 160°C and then for another 35 minutes at 150°C.


  • If the bread gets brown early, you have to cover it with aluminium foil to avoid a burned crust.


  • Let the bread completely cool before cutting.


  • If you make buns you have to bake for only 35 minutes (depending on the oven).
