Souvlaki, or doner is one of the characteristic traditional dishes, loved by the entire Greek population.
Filled with gyros, kebab or bifteki is an integral part of Greek culture.
Greek souvlaki pitas can't be missing from a keto or low carb diet!
With this recipe you will enjoy delicious souvlaki "pitogyra" without any regrets.

Keto Pitas (Greek Souvlaki Flat Bread) No1
Servings 6
• Ingredients:
65 g / Almond flour
60 g / Coconut flour
15 g / Psyllium husk
15 g / Flaxseed flour
10 gr / Egg white protein (Albumin)*
10 g / Baking powder
1/2 tsp / Salt
1 Tbsp / Erythritol - stevia blend 1:1
7 g / Dry active yeast
3 / Egg whites (from medium eggs)
80 - 120 ml / Hot water
Some bamboo fiber flour to roll the pitas
• Instructions:
1 Mix and sieve all the dry ingredients.
* Note
Albumin (helps with the texture and the rolling of the dough) can be replaced with some more almond or coconut flour (5-10g).
2 Add the egg whites and mix lightly.
3 At last, add the hot water gradually (may not be needed the whole amount) and knead.
The dough should be formed without sticking to your hands.
4 Divide the dough into 6 parts.
5 Roll the dough with a rolling pin using two percment papers, sprinkling with bamboo fiber flour.
6 Carve the dough with a medium sized lid to have a round pie.
7 Fry the pitas on low to medium heat in a lightly oiled pan.
8 Turn the pitas on both sides a few times and bake for about 5 minutes .
9 Prepare the filling ingredients for the pitas. (I filled with homemade pork gyros*, cream cheese tzatziki, some onions, tomato, homemade mayonnaise and paprika).
10 Wrap the pitas and enjoy!
* For the gyros filling I just cooked pork chops, and cut it into small pieces like gyros. Then I fried these meat pieces until crispy and added paprika and oregano.
