Low carb, keto friendly pasta flora (or pasta frola) sugar-free, gluten free and also diabetic friendly!

This is one of the most favorite homemade desserts of our childhood.
It's Pasta Flora or Italian "Pasta Frola".
This dessert is also popular in South America and especially in Argentina.
I used to make this dessert before keto. I loved it, so it was a matter
of time for me to find a low carb version.
The sweet crunchy crust in combination with the sour fruit taste is indescribable!
Watch out If you are prone on sweet tastes. This dessert is addictive!
Keto Pasta Flora Pie
Servings 12
• Ingredients:
3 / Eggs
2 Tbsp / Avocado oil (or olive oil)
1 tsp / Homemade vanilla extract
50-80 g / Erythritol - stevia blend 1:1
100 g / Coconut flour
110 g / Almond flour
10 g / Baking powder
1/2 tsp / Guar gumm
1 Tbsp / Lemon (bio) Zest
1/4 tsp / Salt
180 g / Cold butter (cut in pieces)
30 g / Whey protein isolate*
300 g / Keto Strawberry Jam*
• Instructions:
1 Preheat the oven at 170°C.
2 Beat the eggs, avocado oil, vanilla extract and lemon zest, for a while, with a hand mixer.
3 In another bowl, mix the rest of the ingredients except of the protein powder.
4 Combine the two mixtures and add the cold butter in small pieces.
It's better to use a hand mixer otherwise the dough will be warmed up from the heat of your hands.
5 Put 1/4 of the dough aside and spread the rest of the dough in a tart form (it mustn't be too shallow) or in a 28 cm baking pan.
6 Spread a layer of keto jam on the dough.
7 Pour the protein powder into the rest 1/4 dough and knead to absorb.
8 Form some strings with this dough and place crosswise over the jam.
*Note:
You can skip the step with the strings if there's no protein powder available and just sprinkle the rest of the dough on the top of the pie as crumbls.
9 Bake the pie for about half an hour.
After 10 minutes, cover with aluminium foil to avoid burning.
10 Allow the dessert to cool before cutting.
