Who doesn't like these perfect milk slices..
It's about two layers of soft and buttery chocolate cake, filled with wonderful vanilla cream!
In my opinion the low carb version tastes better than the conventional one. With just 2 grams of carbohydrates per slice, they are just perfect with a cup of coffee or tea.
Keto Milk Slices (Milchschnitte)
Servings 12
For this recipe you need the following ingredients:
• Cake base ingredients:
100 g / Grated almonds*
40 g / Cocoa
8 g / Bamboo fiber flour
5 g / Grated gelatin
16 g / Baking powder
100g / Stevia with erythritol 1:1 (powdered)
100g / Soft butter
3 / Eggs
100g / Cream cheese
• Ingredients for the filling:
200 g / Cream cheese (Room Temperature)
30 g / Heavy cream
50 g / Soft butter
2 - 3 tbsp / Stevia - erythritol 1:1
1 tsp / Homemade vanilla extract
• Instructions:
1 Preheat the oven at 160°C (fan assisted).
2 Prepare two large baking trays or baking sheets with non-stick baking paper.
3 Mix all the dry ingredients.
*Note: (Instead of grated almonds you can use grated walnuts or hazelnuts).
4 In a separate bowl, beat the soft butter with the sweetener for a few minutes and add the eggs one by one.
5 Combine with the mixture of dry ingredients beating with a mixer and at the end add the cream cheese (you can use mascarpone cheese instead of cream cheese).
6 Distribute this mixture with a spoon, and put 6 parts of the mixture in the baking pan. Leave distances in-between as they spread during baking time. You can also, use silicone forms.
7 Bake at 160°C for about 15 - 20 minutes.
8 After baking, let them cool.
• Instructions for the filling:
1 For the cream, beat with an egg beater (not a mixer), the sweetener with the cream cheese, until the sweetener melts.
2 Add the vanilla extract and the soft butter and now beat with a hand mixer for a while.
3 Dilute the cream to spread easily, adding some heavy cream.
• Composition:
1 When the cake bases are cool, divide the cream into the 6 of them and cover with the remaining 6 ones.
2 Cut them into half to have 12 pieces.
3 Put the slices in the fridge for at least 2 hours.
• Serve and enjoy!
Store the milk slices in the fridge.
