Low carb, keto friendly macaroons (Greek karides), sugar free, gluten free, dairy free and also diabetic friendly!

This an easy recipe for low carb macaroons with just a few and simple ingredients.


If you are Greek you will possibly remember this famous dessert with the cherry in the middle, found in all bakeries and confectioneries.


It's crispy on the outside, soft inside with the characteristic flavor of the coconut.


That's one of the flavors of my childhood since it was a common treat.


As you know, coconut is a fruit suitable on a ketogenic diet for its nutrients, beneficial fats and relatively low carbohydrates.


This simple and delicious dessert is easy to make and is just perfect!



Keto Macaroons (Karides)


Servings: 14

• Ingredients:


6 / Egg whites


110 g / Erythritol-stevia blend 1:1


200 g / Shredded coconut


40 g / Grated hazelnuts or almond flour

1/4 tsp / Guar gumm


1 tsp / Homemade vanilla extract


2 Tbsp / Almond milk (if needed)

Instructions:


1 Preheat the oven at 175°C (fan assisted).


2 Cover a large baking tray or baking sheet with parchment paper.


3 Weigh and prepare the ingredients.


4 Mix shredded coconut, guar gumm and hazelnut flour (grated hazelnuts).


5 Beat the egg whites, vanilla extract and sweetener until stiff peaks.


6 Pour the coconut mixture into the meringue and mix lightly with a silicon spatula.


7 If the mixture is too dry to form add the almond milk.


8 Shape macaroons with your hands

(you can also use a silicone muffin mold) and place on the prepared baking tray.


9 Bake for about 10 - 15 minutes.


Do not overcook.. macaroons become dry.


10 After baking, let macaroons completely cool.


11 Optionally decorate with melted chocolate (> 85% cocoa content).
