Low carb, keto friendly jam with strawberries or other berries, sugar free gluten free and also diabetic friendly!

Can you think of something delicious that can be spread on a slice of bread, on a waffle, or on a low carb pancake?
Low carb jam of course!
It can complement a boring breakfast as well as a dessert.
Conventional jams are made with lots of sugar.
However, this jam is made without sugar, with ingredients allowed on a keto diet and it's also diabetic friendly!
This recipe is very easy to prepare and the jam is fragrant and very delicious!
Keto Jam
Servings 18 (Tbsp)
Before you start make sure you have the following ingredients:
• Ingredients:
400 g / Strawberries or other berries (frozen or fresh)
100 g / Erythritol-stevia blend 1:1 or any other natural sweetener
3 tbsp / Water
5 g / Powdered gelatin*
1/2 tsp / Psyllium husk
1-2 g / Guar gum
1 tbsp / Lemon juice
• Instructions:
1 Place the fruits in a sauce pan and boil over medium heat, stirring constantly until soft.
2 Add the sweetener.
3 Let the gelatin bloom for 5 minutes in the water and add in the boiling fruits.
You can replace gelatin with agar agar.
4 Continue mixing the psyllium husk with guar gum and add to the boiling mixture.
5 Finally add the lemon juice.
For a smoother jam, blend the fruits with a hand blender.
6 Boil for another 5 minutes on low to medium heat.
7 Pour the jam into glass containers with lids while it's still hot.
8 Store in the refrigerator for about 2 weeks.
