Low carb, keto friendly Greek souvlaki pitas, wheat flour free, gluten free and also diabetic friendly!

Today I thought of making souvlaki pitas using the recipe for the "keto soft sandwich buns".


It was a success! The pitas was very

fluffy and delicious!

The dough was easy to roll as well.


These pitas have the elasticity needed, not to break during rolling.


The extra ingredient added is coconut flour, to make the mixture firmer and easier to roll.


I didn't use dry yeast.

Servings: 8

• Ingredients:


70 g / Almond flour


30 g / Golden flaxseed (fine grated)


15 g / Potato fiber flour* or bamboo

fiber flour


50 g / Coconut flour


25 g / Psyllium husk (fine grated)


1 tsp / Baking powder


1/2 tsp / Salt


230 g / Cream cheese*


70 ml / Sugar-free almond milk*


5 / Egg whites (150 g)


1 / Egg


• Instructions:


1 Weigh the dry ingredients.

Mix well and set aside.


2 In a large bowl, beat the egg and egg whites until slightly fluffy.


3 Add cream cheese and almond milk and stir to combine.


4 Continue adding the dry ingredients and mix with a spoon or a silicon spatula to form a pliable dough.


5 Shape 8 pitas (about 90 grams each).

Open with a rolling pin between 2 parchment papers (if needed, sprinkle some bamboo fiber flour).


6 Carve the dough with a medium sized lid for a round pie (it's an easy way to have a beautiful shape).


7 Fry the pitas in a lightly oiled pan, on a low to medium heat, for about 5 minutes on both sides.


8 Prepare the ingredients you want to fill your pitas.


Filling:

I like homemade pork gyros*, cream cheese tzatziki, some onions, tomatoes, homemade mayonnaise and paprika.


Serve and enjoy!

*Notes:

• Cream cheese can be replaced with Quark cheese (20 - 40%).

• Potato fiber flour can be replaced with bamboo fiber flour or oat fiber flour.

• Almond milk can be replaced with water.
