Low carb, keto friendly Greek donuts, (loukoumades) sugar free, wheat flour free, gluten free, nut free and also diabetic friendly!

Keto Donuts
Servings: 20
• Ingredients:
80 g / Egg white protein (albumin)
12 g / Gluten-free baking powder
150 g / Cream cheese or Quark cheese 20%
2 / Μedium-sized eggs
1 tsp / Homemade Vanilla Extract
35 g / Natural sweetener 1:1 (I use erythritol-stevia blend) 40 g / Odorless coconut oil or avocado oil (for frying) 2-3 Tbsp / Erythritol-stevia blend 1:1 (for serving) Cinnamon (for serving)
• Instructions: 1 Mix the egg white powder, baking powder and sweetener.
2 Add cream cheese, eggs and vanilla extract.
3 Whisk with a mixer for about 1-2 minutes until smooth.
4 Heat the coconut oil in a non-stick pan over medium to low heat.
5 Take spoonfuls from the mixture and place in the pan leaving some space in-between because they double in size.
6 Fry on both sides for about 2 minutes. The donuts become golden brown quickly so pay attention to the heat (from the moment you put the mixture in the pan you must turn of the heat on low).
7 Sprinkling the donuts with some sweetener and cinnamon.
• Serve and enjoy!
Storage: Keep these donuts in a tightly closed container.

Notes:
• Coconut oil will be absorbed by the donuts and has been calculated in the macros of this recipe.
• If you fry in a smaller pan with more coconut oil, they donuts become nice round and evenly golden brown.
•Albumin (egg white protein) can be replaced with unflavored Pure Whey protein isolate.
