Low carb keto friendly donut muffins, sugar free, gluten free, and also diabetic friendly!

These low-carb muffins taste like cinnamon donuts!
They could be made into donuts with special baking forms but I didn't have any. I do not mind at all, on the contrary, I love this 2 in 1 recipe!
These muffins are just perfect and have only 2 g of carbs each!
Their texture, velvety and fluffy in combination with cinnamon and the crack of the sweetener that pops in the mouth, resembles donuts.
This recipe is very easy.
The ingredients are easy to find and I am sure you will love it!
Keto Donut Muffins
Servings 12
• Ingredients:
200 g / Almond flour
20 g / Coconut flour
1/4 tsp / Salt
7 g / Dry yeast
100 g / Erythritol -Stevia blend 1:1
3/4 tsp / Baking soda
4 / Eggs (205 g)
150 g / Bio Crème Fraîche 30%*
70 g / Cream cheese
2 tsp / Homemade vanilla extract
• Topping:
60 g / Melted butter
80 g / Erythritol -Stevia blend 1:1
1 Tbsp / Cinnamon powder
• Instructions:
1 Preheat the oven at 180°C (air assisted).
2 Prepare 12 muffin baking forms.
3 In a large bowl, mix the almond flour, coconut flour, yeast, salt, baking soda and sweetener.
4 In a second bowl beat the eggs with the Crème Fraîche*, cream cheese and vanilla extract.
*Note
Crème Fraîche can be replaced with full fat yogurt.
You can also use sour cream or cream cheese (you should add 1 Tbsp lemon juice to the egg mixture in this case).
5 Combine the dry ingredients mixture with the egg mixture and stir with a fork.
6 Pour the mixture in the baking forms and bake for about 20-30 minutes (depending on the oven).
7 When the muffins are ready, let them cool for a while and prepare the topping.
8 Melt the butter in a small sauce pan.
9 Mux the sweetener with the cinnamon in another small bowl.
10 Dip the top of the muffins in the butter and then in the with the sweetener and cinnamon.
