The small cookies with the amazing vanilla and butter smell?
I remembered these cookies today.
Along with the greek traditional "Kurabiedes" cookies and "Melomakarona", it's a perfect idea for Christmas.
These low carb, keto friendly butter cookies are just as perfect as the real thing!
Especially children will have a lot of fun with the process, which is as simple as the conventional recipe.
Good quality butter and vanilla, a combination of almond and coconut flour is the secret for these crunchy, buttery Danish, melt in your mouth cookies.
Dip the cookies in melted chocolate and the enjoyment will be doubled!
Keto Danish Butter Cookies
170 cookies / 28 servings
• Ingredients:
400 g / Almond flour
30 g / Coconut flour
20 g / Bamboo fiber flour
4 g / Guar gumm
1 tsp / Baking powder
1/4 tsp / Baking soda
1/2 tsp / Salt
250 g / Soft butter
200 g / Stevia with erythritol
3 / Eggs (medium sized)
1 Tbsp / Lemon or orange Zest
2 tsp / Homemade Vanilla Extract
• Instructions:
1 Preheat the oven at 160°C.
2 Prepare some large baking trays or baking sheets with parchment paper.
3 Mix the dry ingredients except the lemon zest and the sweetener.
4 In a large bowl, beat the soft butter and the sweetener with a hand mixer for about 5 minutes, until fluffy.
5 Add the eggs one by one with the vanilla extract and the lemon zest.
6 While beating with the mixer, add the dry ingredients to the butter mixture.
Now you have a very soft dough.
7 Fill the special tool for cookies
(cookie - press) with the mixture and form small cookies pressing directly on the prepared backing sheets.
8 Bake for about 12 - 14 minutes.
9 After baking, let the cookies cool completely, they are very soft as they're hot.
The cookies become crunchier as they cool and the day after they are even better.
10 Melt some dark chocolate (>80% cocoa) in a sauce pan and dip the cookies or spread the chocolate on the top with a spoon (that's optional).
