Crepes are popular and it's a great idea for breakfast but also as a dessert!

Of course the filling is what makes the difference.

Savory crepes filled with cheese and cold cuts, sweet version with keto jam, low carb chocolate syrup, whipping cream and keto ice cream.

On a keto diet you can occasionally enjoy these low carb crepes.

This recipe is ideal for those who avoid dairy or have nut allergies.

It's an easy resipe, without much effort and the whole family will enjoy!

Keto Crepes

Servings: 8

• Ingredients:

7 / Eggs (350g)

60 g / Melted butter or coconut oil*

300 ml / Almond milk

50 g / Coconut flour

1 tsp / Golden flaxseed flour*

1/2 tsp / Guar gum*

1/2 tsp / Salt

10 g / Erythritol - stevia blend 1:1

• Instructions:

1 Mix all the dry ingredients.

2 Beat the eggs and add the melted butter and almond milk.

3 Then add the mixture of dry ingredients to the egg mixture and continue beating for a while.

4 Let the mixture set for about 10 minutes.

5 Heat a non-stick pan at medium - low temperature and grease with some coconut oil.

6 When the pan is hot enough, pour some of the mixture and try to spread it by shaking the pan in a circle movement or with the special crêpe cylindrical tool. You have to move fast as they cook almost immediately.

7 Bake the crepes for about 2 minutes on both sides or until golden brown. Do not try to flip the crepes before they are well cooked as they will crack.

8 Continue this process for the rest of the mixture.

9 Serve with some low carb jam, whipping cream or coconut cream or with some sugar-free chocolate syrup. For the savory version you can also fill the crepes with cheese and salami.

Enjoy!

* Notes:

• Instead of butter you can use coconut oil.

• I used reduced fat flaxseed flour.

If you don't have any flaxseed flour or guar gum (I use these ingredients for the texture, binding and elasticity of the mixture), you can skip both and add 10g more coconut flour instead.
