This is a very simple cake with a bavaroise custard cream filling.
If you ever make a dry cake, think that it can be juicy and delicious again!
This combination can also be a perfect birthday cake.
A simple dessert can be a delicious masterpiece for a special moment.
Keto Bavaroise Cream Cake
Servings 14
• Ingredients:
150 g / Almond flour
50 g / Coconut flour
1/4 tsp / Salt
10 g / Baking powder
Zest of a small bio orange
1 tsp / Homemade vanilla extract
120 g / Melted butter*
5 / Medium sized eggs
160 g / Erythritol -Stevia blend 1:1
100 ml / almond milk
• Filling:
1 bunch / Bavarian basic cream*
• Topping
30 g / Almond fillets
20 g / Powdered sweetener (erythritol -Stevia blend 1:1)
•Instructions:
1 The day before prepare a bunch basic cream of the Keto Bavarian cream recipe according to the instructions and store in the fridge*.
Note:
For a richer and fluffier cream, you can also use normal Bavarian Cream.
2 Preheat the oven at 170°C (fan assisted).
3 Prepare a round cake form with parchment paper.
4 Mix and sieve the dry ingredients.
5 Melt the butter.
*You can replace the butter with 110 g of coconut oil.
6 Beat the eggs for 5 minutes and then add sweetener, vanilla extract, orange zest, melted butter and almond milk.
7 Then combine the mixtures, beating with a mixer.
8 Pour the mixture into the prepared baking form and smooth the surface.
9 Bake for about 30 - 40 minutes, depending on the oven.
Check in between and cover with aluminium foil if needed, to avoid burning.
10 After baking, let the cake completely cool and then cut horizontally, into 2 bases.
11 Beat the cold basic Bavaroise cream with a mixer until fluffy and smooth.
12 Put the first cake base on a serving dish and spread over the whole amount of the cream.
13 Place the second cake base on top.
14 Garnish with almonds and powdered sweetener.
