Delicious low-carb, keto friendly coconut pudding cream, sugar free, gluten free, dairy free, and even diabetic friendly!

This is an easy pudding recipe made in just 10 minutes. It's very tasty with a special texture (reminiscent of "moustalevria" or baby biscuit cream) and it's ideal for children and for those who avoid dairy. This cream has a distinctive coconut scent and is a vitamin bomb. It also has very good macros, and will fill you with energy.
Keto Coconut Pudding Cream
Servings: 5
• Ingredients:
400 ml / Canned coconut milk (full fat)
65 g / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1)
3 / Eggs (whole)
2 / Egg yolks
1/2 tsp / Guar gum
1/2 tsp / Powdered psyllium husk
1 tsp / Homemade Vanilla Extract
• To serve (optional): 2 Tbsp / Shredded coconut 1 Tbsp / Sesame seeds 1/4 tsp / Cinnamon
• Instructions:
1 In a mixing bowl, beat the eggs, the yolks, 100 ml of the coconut milk and the vanilla extract.
2 In a small bowl, mix well half the amount of sweetener, guar gum and psyllium husk.
3 In a small saucepan, heat the remaining (300 ml) coconut milk and the other half of sweetener.
4 When the mixture comes to a boil, remove the saucepan from the heat and add the mixture of guar gum, psyllium husk and sweetener, stirring quickly with a hand whisk.
5 Then, add the egg mixture whisking at the same time.
6 Place the saucepan back on the heat, (this time on a low temperature) and heat for a while, stirring vigorously, but do not boil.
7 Once the cream is set, divide into 5 serving bowls.
8 To serve, roast the sesame seeds and shredded coconut in a small pan.
9 Spread the toasted mixture on the top of each pudding.
Add some cinnamon (optional)
This cream is served hot or cold.
