Low carb, keto friendly soft coconut cookies, sugar free, wheat flour free, gluten free, nut free and also diabetic friendly!

This is an easy and very tasty cookie recipe that doesn't take more than one hour to be made.


There are onlyfew ingredients for this recipe, and I think anyone who follows a low carb or a keto diet has these ingredients in their cupboards and fridge.


This recipe can also be used as a crust for a tart.


It is ideal for those who avoid nuts or have allergies because it doesn't contain any nut flour.


These cookies are different than almond flour cookies. Coconut flour absorbs a lot of moisture.

As a result these cookies may be crispy on the outside but remain soft on the inside.

Keto Coconut Cookies


Pieces: 18

• Ingredients:


120 g / Soft butter


50 g / Cream cheese


1 / Medium-sized egg


80 g / Erythritol-stevia blend or any other natural sweetener 1:1 of your choice

1 tsp / Homemade vanilla extract


60 g / Coconut flour


4 g / Baking powder (1 tsp)


1/2 tsp / Guar gum*


1/4 tsp / Salt


50 g / Dark chocolate (> 85% cocoa)* (optionally)

• Instructions:


All the ingredients must be at room temperature.


1 In a bowl, mix the soft butter and cream cheese with a hand whisk.


2 Add the egg and beat for a while until you have a smooth mixture.


3 Continue adding the sweetener and vanilla extract and stir lightly.


4 In another bowl, mix the coconut flour, baking powder, guar gum and salt.


5 Then combine the two mixtures using a silicone spatula.


*Notes:

• If desired, at this step you can add the chopped chocolate into the mixture or just keep to decorate the cookies after baking.

• If you don't have any guar gum you can replace it with a tablespoon of coconut flour.

The dough is sticky but don't worry..


6 Wrap the cookie dough in a cling film, like an elongated candy, and place in the fridge for at least 1 hour.

This makes the dough easer to cut.


*Note:

You can also form these cookies with your hands, especially if there are pieces of chocolate in the dough (that makes difficult to cut with a knife).


7 After 1 hour, preheat the oven at 175°C and prepare a large baking tray with parchment paper.


8 Remove the food wrap from the dough and cut 1 cm thick slices with a knife.


9 Place the cookies on the backing tray and bake for about 15 minutes.


Watch out during baking time as they burn easily!


10 After baking the cookies are very soft. Wait for them to cool.


Decoration:


If you want to decorate the cookies with chocolate, this is an easy way:


1 Chop the chocolate into small pieces and place in a small zipping bag.


2 Heat some water in a saucepan and set aside just before boiling.


3 Place the bag with the chocolate in the hot water and wait until melted.


4 Then make a very small hole and decorate the cookies with the melted chocolate.


Your perfect cookies are ready.
