Low carb, keto friendly chocolate salami (mosaic), sugar free, gluten free and also diabetic friendly!

I think the "chocolate salami" or "mosaic" was the first dessert I made when I was a child and started the first experiments in the kitchen.
It was easy to make, no baking needed and had many chances to succeed.
I only had to crumble some cookies, mix with butter, cocoa and sugar and boom! The dessert was ready.
There are only a few ingredients for this recipe, so it wasn't difficult to think of a low carb version.
I only had to replace the store bought cookies and sugar.
So I used the "keto vanilla and cocoa cookies" recipe and erythritol-stevia blend 1:1 instead of the sugar.
It may be an easy recipe but I think it can be a beautiful festiv dessert, with the right presentation.
Keto Chocolate Salami
Servings 12
• Ingredients:
200 g /Keto vanilla and cocoa cookies (about 10-11 cookies)
250 g / Melted butter
160 g / Erythritol-stevia blend 1:1 (powdered)
50 g / Cocoa
1/4 tsp / Salt
1 Tbsp / Orange zest
80 g / Walnuts
50 g / Almond sticks or coarsely chopped almonds
35 ml / Brandy
20 g / Erythritol-stevia blend 1:1 powdered (for decoration)
• Instructions:
1 Melt the butter (no need to be completely melted).
2 Beat the butter, cocoa, sweetener and salt using a hand mixer on low speed.
3 Add the orange zest, walnuts and almonds and mix with a silicone spatula.
4 Break the cookies into small pieces or cut with a knife and wet with the brandy.
5 Add the cookies to the remaining ingredients and mix.
6 Spread the mixture on a food cling wrapping film, fold cylindrically to form a salami shape and close the edges like a candy.
7 Place in the refrigerator for at least 3 hours.
8 Before serving, sprinkle the chocolate salami with the icing sweetener and optionally, tie with a twine.
