Low carb, keto friendly cauliflower tots, wheat flour free, gluten free and also diabetic friendly!

This is a simple recipe for delicious cauliflower tots.


Cauliflower has an important role in the low carb and keto diet.


You can steam it, make a salad of it, or bake it.


It can be used as a pizza crust, as low carb "rice", and also to make a tasty béchamel sauce.


This time I wanted to make tots.


Of course cauliflower can be replaced with grated zucchini to make zucchini tots (Greek kolokithokeftedes).

Keto Cauliflower Tots


Pieces 30

• Ingredients:


1 / Medium-sized cauliflower


1 / Medium-sized onion


3 Tbsp / Chopped parsley


70 g / Cream cheese


280 g / Grated mozzarella cheese


50 g / Almond flour


1/2 tsp / Baking powder


2 / Eggs


1/2 tsp / Salt


• Instructions:


1 Preheat the oven at 180°C (fan assisted).


2 Prepare a baking tray or baking sheet with perchment paper.


3 Cut the cauliflower into small florets.


4 Wash and boil in salted water for a while (no need to be very soft).


5 Drain and much in a food processor.

For this recipe you need 700 g of muched cauliflower.


6 Mix the rest of the ingredients with the cauliflower puree.


7 Form 30 long or round tots and place in the bake sheet.


Tots spread a bit during baking time so leave some space in between.


8 Bake for about 20 - 25 minutes until golden brown.
