Keto Buns And Flat Bread (Greek Lagana)

Low carb, keto friendly buns and flat bread (Greek Lagana), wheat flour free, gluten free, dairy free and also diabetic friendly!

This recipe came out of necessity, during the summer holiday season.


When I travel it's not possible for me to have all the ingredients I need, to make the recipes I want, so I limit myself to the basics.


This recipe has only a few ingredients but the result was better than

expected.


"Lagana bread", (art of greek flat bread) ideally, should be vegan, but as many times I tried to make keto bread without eggs, I didn't like the result.


So for "lagana", I consider this recipe to be the best choice.


It comes out fluffy, lightly sweet and the most important it's easy to make!


Of course you can use any other keto bread recipe you prefer to make "lagana"... it's just a matter of choice.

Keto Buns And Flat Bread

(Greek Lagana)


Servings: 8

• Ingredients:


60 g / Coconut flour


50 g / Almond flour


15 g / Golden Flaxseed flour*


30 g / Psyllium husk (powdered)


15 g / Baking powder


1 tsp / Salt


6 / Egg whites (of medium eggs)


1 / Whole egg


130 ml / Hot water


2 tbsp / Sesame seeds (optional)

• Instructions:


1 Preheat the oven at 170°C (fan assisted).


2 Prepare a baking tray or baking sheet with a parchment paper.


3 Mix all the dry ingredients.


4 Add the rest of the ingredients except of the water and beat with the mixer for a while, to combine.


*Notes:

• Eggs should be at room temperature.


• I use reduced fat golden flaxseed flour in this recipe, however it can be replaced with 25 g golden flaxseed meal (fine grated).

5 Add the hot water, beat for another half a minute and let the dough rest for 10 minutes.


6 Form 1 lagana spreading the whole dough on a parchment paper, or shape 8 buns.


7 Optionally sprinkle the surface with some sesame seeds.


8 Place the buns or the flat bread in the baking tray and bake for about 40 minutes.


9 Let completely cool before slicing.


Serve and enjoy!



Storage:

Buns and lagana can be stored for 5 days in the fridge (in a zippered bag or in a container with a lid) and for a month in the freezer.


Macros for 1 serving:
  1. Protein: 6 g

  2. Carbohydrates (net): 2.6 g

  3. Fat: 5.5 g

  4. Energy: 113 Kcal
