Low carb, keto friendly, easy Greek "bougatsa" pancake, sugar free, wheat flour free, gluten free, and also diabetic friendly!

The flavor of this easy and super tasty pancake really resembles a Greek bougatsa!
The crispy baked cheese crust replaces the phyllo crust in this recipe and in combination with the rest of the ingredients tastes really like a "bougatsa".
If you serve this pancake with keto syrup you'll have the best result but even if you don't have any, you will definitely enjoy this recipe.
Keto Bougatsa Pancake
Portions: 2
• Ingredients:
2 / Eggs (Medium-sized)
30 g / Almond flour
50 g / Cream cheese
1 tsp / Homemade Vanilla Extract
1/4 tsp / Gluten-free baking powder
Optional (if keto syrup is not available):
1-2 Tbsp / Natural sweetener 1:1 (I use erythritol-stevia blend 1:1)*
• To fry:
1 tsp / Coconut oil
80 g / Grated mozzarella cheese
• To serve:
2 - 3 Tbsp / Keto sugar free syrup*
1 tsp / Powdered erythritol-stevia blend 1:1
1/4 tsp / Ceylon cinnamon (spice)

• Instructions:
1 In a small basin, mix well all the ingredients for the pancake mixture with a hand whisk.
2 Let the mixture rest for 10 minutes.
3 In a large pan, heat the coconut oil on and before gets too hot, cover the pan surface with the 3/4 the amount of grated mozzarella cheese.
4 When the cheese starts melting, pour the pancake mixture, making sure to cover the melted cheese.
5 Lower the heat (on a scale up to 9 choose 3) and cover the pan with a lid.
6 Bake for about 3-5 minutes checking if the pancake is set.
7 Spread the rest of the cheese over the pancake and when starts melting, turn over the pancake with the help of a spatula.
8 Bake for another 2-3 minutes until golden and then take out of the pan and cut into 2 portions.
9 Add keto sugar-free syrup, powdered sweetener and cinnamon.
• Serve and enjoy!
*Notes:
•You can omit the syrup in this recipe. In that case just add 1-2 Tbsp of sweetener to the pancake mixture.
