Low carb, keto friendly biftekia (meatballs) with Chinese (napa) cabbage, gluten free, nut flour free, even diabetic friendly!

If you haven't tried this before you're missing something special! This is a very tasty recipe for the whole family and I'm sure that children and adults will love it. For the biftekia (meatballs) I use the recipe "Keto Greek Biftekia" . They're always fluffy, but in this recipe I prefer to only add some cinnamon and remove the mint, oregano or thyme from the minced meat mix. Chinese cabbage (napa) can be replaced with a fluffy cabbage we use for dolmadas (I use Chinese cabbage because it has fewer carbohydrates). The taste is just the same. The steps for this recipe are very simple and the result is just perfect!
Keto Biftekia (Meatballs)
With Chinese Cabbage
Servings 7
• Ingredients: 1 bunch of / "Keto Greek Biftekia" recipe (without the mint, oregano or thyme) +
1/2 tsp / Ceylon cinnamon
• For the cabbage layer:
800 g / Chinese cabbage (napa)
70 g / Onion
30 ml / Olive oil
2 tsp / Salt
1 tsp / Pepper
1/2 tsp / Ceylon Cinnamon
30 g / Butter
• For the topping:
150 g / Grated cheese (cheddar or Gouda)
70 g / Homade Keto Mayonnaise
30 g / Pickled cucumbers
1-2 tsp / Mustard (Dijon)
• Instructions: 1 Prepare the mixture for the meatballs according to the instructions of the recipe "Keto Greek Biftekia" (without any mint, oregano or thyme) and add the cinnamon. 2 Wash the cabbage and chop into small pieces (1-2 cm). 3 Chop the onion. 4 Put the chopped cabbage and onion in a large bowl and add salt, pepper, paprika, cinnamon and olive oil. 5 Rub the ingredients with your hands to minimize the volume and spread in a large baking pan (I use a 40x32 cm backing pan) 6 Cut the butter into small pieces and divide on the chopped cabbage. 7 Then shape 11 meatballs with the minced meat mixture and place over the cabbage layer (for one serving, estimate about 1.5 meatballs).
8 For the coating, chop the pickles into fine pieces and grate the cheese. 9 Mix the pickles and cheese with all the other ingredients in a small bowl. 10 Distribute the cheese mixture and spread on over each meatball.
11 Bake the food at 180°C (air assisted) for about about 40 minutes.
