Low-carb, keto friendly apple pie, without apples, sugar free, wheat flour free, gluten free and also diabetic friendly!

Apples are not recommend on a keto diet due to high carbohydrate (fructose) content.
But since cauliflower can be rice and pizza crust, zucchini can also become an "apple pie".
Zucchini are neutral in flavor, adding the write spices and lemon they can be taste like apples.
The crust for this "apple pie" is the one from Keto Pasta Flora recipe.
I just add some nutmeg and bake for about 10 minutes before filling the pie.
Instead of strips on this pie I just sprinkled 1/3 of the dough over the filling.
In Germany, this is how apple pies (Streuselkuchen) are usually be made.
Kolrabi* (turnip) doesn't soften as much as zucchini and you really think you eating an apple (If you can't find Kolrabi, there's an alternative*).
Keto Apple Pie Without Apples
Servings: 15
• Ingredients:
1 bunch / Crust of Keto Pasta Flora Pie recipe
400 g / Zucchini (peeled)
450 g / Kohlrabi (peeled)
3 Tbsp / Butter
50-80 g / Erythritol-stevia blend 1:1
2 Tbsp / Cinnamon
1 tsp / Grated nutmeg (spice)
Zest and juice of 1 bio lemon
1 tsp / Powdered gelatin
¼ tsp / Guar gum
½ tsp / Psyllium Hask
1/4 tsp / Salt
•Instructions:
1 Peel and grate the zucchini und Kolrabi, and cut into small cubes.
2 Heat the butter in a pan and sauté the veggies.
3 Add the sweetener, spices, zest and lemon juice.
4 Let simmer for 5 minutes or more until the veggies are completely soft with a jam consistency.
5 Put the gelatin into 3 Tbsp of water to bloom, heat in the microwave for only 2-3 and stir to dissolve.
6 Mix guar gum, psyllium husk and salt and add to the veggie mixture, mixing quickly.
7 Add and stir in the gelatin.
You can also add some extra spices and lemon juice for more intense flavor.
8 Remove from heat and let the "veggie jam" cool until you prepare the crust of the apple pie.
9 Preheat the oven at 170°C.
10 Prepare the Keto Pasta Flora Pie crust following the instructions of the recipe and then spread 3/4 of the dough in a buttered baking pan (I use 18X28cm baking pan but it can also be made in a round form of 28 cm).
11 Bake the crust for about 10 minutes.
12 Put the crust out of the oven and spread the veggie jam.
13 Rub the rest of the dough with your hands over the veggie jam.
14 Bake the "apple pie" for about 30 min (if it browns quickly, you should cover the pie with aluminium foil).
15 After baking, let the dessert completely cool.

*Note:
If turnip (Kolrabi) is not available, you can replace it with the corresponding amount of peeled zucchini.
