Easy savory low carb, keto friendly Greek tiropitakia (cheese biscuits) wheat flour free, gluten free and also diabetic friendly!

This is a recipe for the easiest keto tiropitakia!


The process is similar to the well-known (for those on a keto diet) "fathead" dough which has melted mozzarella as a main ingredient.


For these Greek cheese biscuits I use some other melting cheeses and not mozzarella which is a neutral and relatively tasteless cheese.


I had various cheeses in the fridge that had to be eaten not to get spoiled and so this recipe came about.


These tiropitakia are very tasty and you only need 30 minutes of your time including baking to make them.


Easy Keto Tiropitakia


Pieces: 14

• Ingredients:


70 g / Almond flour


80 g / Cheddar cheese


80 g / Gouda cheese


40 g / Kefalograviera (Greek hard cheese)


1 / egg


200 g / Cottage cheese


1 Tbsp / Sesame seeds or black sesame seeds to sprinkle (optionally)


• Instructions:


1 Weigh the ingredients and grid the cheeses


2 Preheat the oven at 180°C (conventional).


3 Prepare an baking tray with a parchment paper.


4 Place the almond flour and the melting cheeses (cheddar, gouda, kefalograviera) in a microwave suitable bowl and mix well.


4 Heat for 2 minutes and then stir until smooth.

If the cheeses have not melted, repeat the process for a few seconds.


Note:

If there is no microwave oven, you can also use a non-stick pan and heat the cheeses on a low heat, stirring constantly.


5 Blend the cottage cheese and the egg into a blender until smooth.


6 Combine the ingredients mixing or kneading by hand.


The mixture is sticky.


7 Place spoonfuls of the mixture on the baking tray, leaving spaces in between to spread during baking.


8 Sprinkle with black sesame seeds (optional).


9 Bake for about 20 minutes or until golden brown.
