Easy Keto Ice Cream

Summer is approaching, temperatures are rising and ice cream is our favorite treat. This time I tried to make a simple recipe for ice cream, with only few ingredients, which is made quickly without the need for an ice cream maker. Most of the keto ice cream recipes are relatively complicated, they need a lot of preparation, egg yolks and boiling to achieve a creamy texture but also not to harden in the freezer. This problem does not exist with this ice cream and the secret is xylitol. As you will see in the list of ingredients I use a mixture of erythritol-stevia blend and xylitol. You don't even need to use an ice cream maker and the ice cream remains so soft that you can serve even with a spoon. I use a small amount of ingredients because this recipe is very easy and you can repeat the process.

Of course the amount can be doubled but you need to be careful in excessive consumption due to calories. This simple version of ice cream can be enriched with roasted nuts, melted chocolate or ghanashe, keto toffee caramel sauce, or keto strawberrie jam.

You can also add cocoa powder for a chocolate flavored ice cream.


Easy Keto Ice Cream


Servings 2

Ingredients: 200 ml / Heavy Cream (bio) 18 g / Xylitol 18 g / Erythritol-stevia blend 1:1 1/5 tsp / Guar gum 1 pinch of / Salt 1 tsp / Homemade Vanilla Extract 1-2 tsp / Brandy Some almond or coconut milk to dilute the mixture (if needed). Instructions:


1 Whip the heavy cream until fluff (preferably use organic heavy cream, without additives). 2 In a small bowl, mix the sweeteners, guar gum (or xanthan gum) and salt. For a chocolate flavored ice cream add 1-2 tsp of cocoa to this mixture.

3 Add the sweetener mixture into the heavy cream, beating with a hand mixer. 4 At the end add vanilla extract (or other aroma) and brandy. 5 If the mixture becomes too thick just dilute with some almond or coconut milk (the texture should look like melted ice cream). 6 Divide the mixture into 2 small bowls and place in the freezer for at least 4 hours.

Serve and enjoy!
