These cookies are made with common ingredients that can be found even in the neighborhoods supermarket!
They are made quickly and are crispy and very tasty.
During the holidays, when I am away from home, I try to make something easy with the ingredients I can find.
This is how this recipe came about and everyone who tasted it said "they're the best"!
For those who do not have much time or have difficulty with complex recipes but want a treat this is the ideal recipe.
As you will see, this is a classic base recipe for cookies that accepts various additions and acquires the fkav and aroma you want.
Try adding chocolate chips!
It's incredible!
Add cinnamon and you will have crunchy cinnamon cookies.
Easy Keto cookies
Pieces 21 (30g each)
• Ingredients:
200 g / Almond flour
25 g / Coconut flour
120 g / Erythritol-stevia blend 1:1 or any other natural sweetener
2 g (1/2 tsp) / Baking powder
2 g (1/2 tbsp) / Baking soda
1/4 tsp / Salt
100 g / Butter (very soft)
15 ml / Olive oil
1 / Egg
1-2 tsp / Homemade vanilla extract
• Optionally:
50 g / Dark chocolate (> 85% cocoa content) or
80 g / Coarsely chopped almonds
1/2 tsp / Cinnamon
• Instructions:
1 Put the butter out of the fridge and let for half an hour at room temperature or heat for a while in the microwave oven.
2 If you choose to add chocolate or almonds you have to chop those into small pieces (almonds are tastier when roasted).
3 Preheat the oven at 175°C (conversational).
4 Prepare 1 large baking tray or baking sheet with parchment paper.
5 Mix all the dry ingredients and if necessary sieve to dissolve any pellets.
6 Add the rest of the ingredients except of the chocolate (or almonds).
7 Mix well with a spoon or by hand until combined.
8 Optionally add the chopped chocolate or the almonds and the cinnamon.
9 Form 21 balls of 30 grams each, and place on the baking tray.
10 Press the balls crosswise with a fork to flatten and bake for about 15 minutes or until slightly golden at the edges.
11 After baking, these cookies are very soft, they become crispy as they cool.
