Easy macaroon cookies with tahini (sesame paste) and chocolate, crunchy on the outside and chewy on the inside.
That's another type of cookies, with a special taste.
Almond Cookies With Tahini
Servings 16
• Ingredients:
260 g / Tahini (sesame paste)
20 g / Almond flour
100 g / Erythritol - stevia blend 1:1
1 tsp / Homemade vanilla extract
1 tsp / Backing powder
1/8 tsp / Salt
2 / Eggs
2 Tbsp / Cream cheese (or coconut cream)
60 g / Almond sticks or coarsely chopped almonds
40 g / Dark chocolate (> 85% cocoa content)
1/2 tsp / Cinnamon
1-2 Tbsp / Powdered stevia - erythritol
• Instructions:
1 Preheat the oven at 170°C.
2 In a bowl, mix tahini (sesame paste), sweetener, salt, baking powder, vanilla extract, eggs and almond flour.
3 Add the chopped almonds and the cream cheese.
4 Combine the ingredients for a while.
5 The dough is sticky. Form the cookies using with two spoons.
6 Place the cookies in a large baking tray covered with parchment paper.
7 At the end, place few pieces of chocolate on each cookie and sprinkle with cinnamon and powdered sweetener.
8 Bake for about 20 minutes or until lightly golden brown.
